Contigo® Birria Pie

Directions

  1. Dilute birria base with 5 parts water to 1 part birria. Whisk together three ounces of birria sauce and pizza sauce then reserve.
  2. Take 13 ounces of birria sauce and pace in a wide mouth stainless steel bowl. Dunk the pizza crust in the sauce turning several times to get a good coating. Remove crust from bowl.
  3. Place a pizza screen over the same bowl. Now top with pizza crust and allow to sit for 1-2 minutes to drain excess birria sauce.
  4. Toss the barbacoa beef in the pizza sauce and birria sauce mixture. Spread the sauce with the beef across the bottom of the pizza crust. Sprinkle with half of the shredded cheese. Arrange sliced golden tomatoes on the pizza. Followed by the green chilis. Sprinkle the remaining white cheddar cheese on top then bake in your pizza oven of choice.
  5. Remove from the oven. Brush the crust with some of the eight ounces of birria sauce then sprinkle with cotija cheese.
  6. Let the pie rest for one minute then slice into 8 portions.
  7. Garnish the whole pie with a sprinkle of diced red and white onions followed by hand torn cilantro and more cotija cheese. Serve the pie with a side of Birria Sauce for dipping.

  • 1 ea Ultimo!® Pizza Crust, Frozen, 14-inch
  • 8 oz Bacio® cheese, white cheddar, blend
  • 8 oz Contigo® barbacoa beef
  • 16 oz Contigo® birria sauce
  • 3 oz Roma® Pizza Sauce, Prepared
  • 1/2 cup Contigo Cotija Cheese , grated
  • 8 oz Contigo® birria sauce, for dipping
  • 1 cup Contigo® diced green chilis, drained and rinsed
  • 1 1/2 cups Peak Fresh Produce® golden teardrop tomatoes, cut in half
  • 1/2 cup Peak Fresh Produce® Onion(s), Red, diced, for garnish
  • 1/4 cup Peak Fresh Produce® Onion(s), White, diced, for garnish
  • 1 cup Peak Fresh Produce® Cilantro, Fresh, hand torn for garnish
