Peak Fresh Produce® Eggplant Dip
Directions
- Pulse eggplant and garlic in food processor.
- Add tahini, lemon juice, and half a tablespoon of olive oil then pulse to combine.
- Remove mixture from bowl and fold in fresh herbs, salt, zest, and pepper.
- Chill and serve with crackers, vegetables or grilled/toasted bread.

- 4 ea Peak Fresh Produce Eggplant, roasted and peeled
- 1/2 cup tahini
- 3 ea Peak Fresh Produce® Garlic, Clove(s)
- 1/2 tsp Magellan® Cumin, ground
- 1/2 tsp sea salt
- 1/4 tsp Magellan® Black Pepper, ground
- 2 tbsp Peak Fresh Produce® Parsley, Fresh, minced
- 1 tsp Peak Fresh Produce® Thyme, Fresh, minced
- 1 tbsp Peak Fresh Produce® Oregano, minced
- 1 Peak Fresh Produce® Lemon(s), zest and juice
- 1 tbsp Piancone Epicureo® extra virgin unfiltered olive oil
