Elote Mexican Corn Salad

Directions

  1. In a large mixing bowl combine mayo, cheese, cilantro, lime juice and spices, stirring well to combine.
  2. Stir in corn, mixing well.
  3. Portion and serve chilled, room temperature or can bake in oven at 350°F until hot.
  4. Garnish with additional cilantro and/or Tajin if desired.

  • 2 cups Kraft® Deluxe Mayonnaise
  • 6 lbs. corn, kernels, fire roasted
  • 2 cups cheese, cotija, crumbled
  • 1 1/2 cups cilantro, fresh, chopped, plus more for garnish
  • 3/4 cup lime juice, fresh
  • 2 tbsp Tajin, plus more for garnish
  • 1 tbsp garlic, powder
