Elote Mexican Corn Salad
Directions
- In a large mixing bowl combine mayo, cheese, cilantro, lime juice and spices, stirring well to combine.
- Stir in corn, mixing well.
- Portion and serve chilled, room temperature or can bake in oven at 350°F until hot.
- Garnish with additional cilantro and/or Tajin if desired.

- 2 cups Kraft® Deluxe Mayonnaise
- 6 lbs. corn, kernels, fire roasted
- 2 cups cheese, cotija, crumbled
- 1 1/2 cups cilantro, fresh, chopped, plus more for garnish
- 3/4 cup lime juice, fresh
- 2 tbsp Tajin, plus more for garnish
- 1 tbsp garlic, powder
