Empire’s Treasure® Fish Taco
Directions
- Coat mahi-mahi with jerk seasoning.
- Heat oil over high heat in sauté pan. Add mahi-mahi and cook for 2-3 minutes per side.
- Dice mahi-mahi and portion into corn tortillas. Now top with jicama slaw, mango salsa and a drizzle of chipotle avocado puree.
- Warm tortillas in a stack of 6 in pre-heated 350-degree oven for 7-8 minutes.

- 2 4 oz Empire's Treasure® Mahi Mahi Fillet(s)
- 3 tbsp Magellan® jerk seasoning
- 12 ea Contigo® Tortilla(s), Corn 6-inch
- 2 cups Jicama and Sweet Pepper Slaw, (see recipe below)
- 2 tbsp Roma® Oil, Olive
- 1/2 cup Contigo® chipotle avocado puree, (see recipe below)
- 1 cup mango salsa, (see recipe below)
Jicama and Sweet Pepper Slaw
Directions
- Mix all ingredients together in a bowl and allow to rest overnight in the refrigerator for best flavor results.

- 1 cup jicama(s), julienned
- 1 lime(s), juice of
- 4 tbsp Piancone® Oil, Olive, Extra Virgin
- 1 tsp pepper, black
- 1 tbsp Peak Fresh Produce® Cilantro, Fresh, minced
- 1 Peak Fresh Produce® Pepper(s), Green Bell, julienned
- 1 Peak Fresh Produce® Pepper(s), Red Bell, julienned
- 1 Peak Fresh Produce® Pepper(s), Yellow, julienned
- 1/2 tsp salt, kosher
- 2 tbsp vinegar, red wine
Contigo® Chipotle Avocado Puree
Directions
- Puree all ingredients together in food processor. Product will last one day under refrigeration.

Mango Salsa
Directions
Combine all ingredients in mixing bowl, toss well and check for seasoning.

- 1 bunch Peak Fresh Produce® Onion(s), Green, chopped
- 1 Peak Fresh Produce® Onion(s), Yellow, diced
- 1 tsp salt
- 8 tomato(es), Roma, diced
- 3 tsp vinegar, rice wine
