Toss cabbage, mayonnaise, vinegar, and pepper in a bowl. Cover and refrigerate overnight. Remove from refrigerator and toss before service.
Heat oil in deep fryer to 350° F. Cook onion rings and cheese curds for 3-4 minutes until golden brown. Remove from fryer and drain on towels to absorb excess oil.
Toss the cheese curds with the buffalo sauce.
Toast sesame seed burger bun then place the cabbage slaw on the bottom bun topped by the onion rings followed by the buffalo cheese curds crown with the other bun and take a bite of this home run. Optional: add chipotle ranch to the top bun for an extra kick.
