Fruit and Vegetable Curried Stew
Directions
- In a large pot combine all ingredients over medium high heat to a boil.
- Reduce heat and simmer until the potatoes are tender.
- Add the cilantro and serve over brown rice, quinoa, or couscous.
- Top with the sliced scallions before serving.

- 6 oz. apricots, dried, chopped
- 3 Tbsp. curry powder
- 2 cloves garlic, minced
- 6 oz. cranberries, dried
- 1/2 cup Peak Fresh Produce® Cilantro, chopped
- 1 cup Peak Fresh Produce® Onion(s), Red, medium diced
- 1 cup Peak Fresh Produce® Pepper(s), Green Bell, medium diced
- 1 lb. Peak Fresh Produce® Potato(es), Sweet, medium diced
- 1/2 cup Peak Fresh Produce® Scallion(s), chopped
- pinch red pepper, flakes
- 24 oz. water
- 8 oz. West Creek® Honey
- 6 oz. West Creek® Peanut Butter
