Fuji Apple and Kale Salad

Directions

  1. Thaw apples according to package instructions.
  2. In a large mixing bowl add apples, kale, pumpkin seeds, pomegranate and feta cheese. Stir in vinaigrette and season with salt and pepper.
  3. Let marinate for at least 30 minutes. Serve chilled.

  • 2 cups kale, chopped, wilted
  • 1 cup pumpkin seeds, toasted
  • 1 cup Prosciutto, diced
  • 1 cup pomegranate seeds
  • 1 cup cheese crumbles, feta
  • 9 fl oz Dijon vinaigrette, prepared
  • 2 tsp Kosher salt
  • 1 tsp Black Pepper, ground
