Fuji Apple and Kale Salad
Directions
- Thaw apples according to package instructions.
- In a large mixing bowl add apples, kale, pumpkin seeds, pomegranate and feta cheese. Stir in vinaigrette and season with salt and pepper.
- Let marinate for at least 30 minutes. Serve chilled.

- 2 1/2 lbs Simplot RoastWorks®: RTE Flame-Roasted Fuji Apples 6/2.5lb
- 2 cups kale, chopped, wilted
- 1 cup pumpkin seeds, toasted
- 1 cup Prosciutto, diced
- 1 cup pomegranate seeds
- 1 cup cheese crumbles, feta
- 9 fl oz Dijon vinaigrette, prepared
- 2 tsp Kosher salt
- 1 tsp Black Pepper, ground
