Greek Isle Salad With Spiced Pepitas

Directions

  1. In a salad bowl, layer baby spinach, heated gyros slices, tomatoes, red onions, spiced chickpeas and pepitas.
  2. Drizzle salad with Lemon Greek Yogurt Dressing and garnish with grilled pita wedges.

Ingredients

  • 2 tbsp chickpeas, spiced, roasted
  • 2 /12 oz KronoBROIL® Gyros Slices
  • 2 tbsp Lemon Greek Yogurt Dressing
  • 2 tbsp Peak Fresh Produce® Onion(s), Red, thin slices
  • 1 tbsp pepitas
  • 1 Kronos® Pita Bread, 6", grilled, quartered
  • 2 cups Peak Fresh Produce® Spinach, Baby
  • 2 tbsp Peak Fresh Produce® Tomato(es), diced

Greek Spiced Pepitas

Directions

Toss pepitas with seasoning until evenly coated.

Ingredients

  • 1/4 tsp Black Pepper
  • 1 tsp oregano, crumbled finely
  • 1 cup pepitas, roasted salted

Directions

  1. In a mixing bowl, combine all ingredients and whisk to combine.
  2. Store refrigerated until use.
