In a sauté pan add oil, onions, ground meat, peppers, salt, pepper, onion, powder, cumin, chili powder, paprika, and smoked paprika. Cook for 3-4 minutes over medium high heat.
Pour half the sauce in the bottom of an oven proof pan.
Dip tortilla in sauce then fill with a portion of ground meat alternative mixture and a portion of cheese. Roll into a tube and place in pan with sauce.
Once pan is full pour remainder of sauce over the top adding remaining cheese.
Cover and cook in 375-degree oven for 15-20 minutes then enjoy.
