Grilled Oysters with Grapefruit and Red Pepper Relish

Directions

  1. Grill oysters, flat-side up, over medium-high heat 3 to 5 minutes or until oysters begin to open. (Discard any oysters that do not open.)
  2. Remove oysters from grill with spatula or tongs. Remove the top shells. (Oysters will be hot.) Loosen oysters from the bottom shells with oyster or paring knife.  
  3. Top each oyster with 1 tsp. (15 mL) of the Relish and 1 of the remaining grapefruit segments. Grill oysters 3 to 5 minutes or until heated through. Sprinkle with parsley. Serve immediately.

  • 8 fresh oyster(s), (in shell)
  • 2 tsp Peak Fresh Produce® Parsley, Fresh, chopped

Grapefruit and Red Pepper Relish

Directions

  1. For the relish, heat oil in medium sauté pan on medium heat.
  2. Add onion and garlic; cook and stir on medium heat 3 minutes or until softened.
  3. Add 1/2 of the grapefruit segments and bell pepper; cook and stir 30 seconds.
  4. Remove from heat. Stir in honey, basil, salt and red pepper. Set aside.

  • 1 tbsp Peak Fresh Produce® Garlic, Clove(s), minced
  • 1/3 cup grapefruit, segments, divided
  • 1 tbsp West Creek® Honey
  • 1 tbsp oil, peanut, (sub vegetable oil)
  • 2 tbsp pepper(s), red bell, finely chopped
  • 2 tbsp onion(s), red, finely chopped
  • 1/8 tsp red pepper, ground
  • 1/4 tsp salt
