Jala-Mango BBQ Salmon Salad

Directions

  1. Preheat oven to 400 degrees.
  2. Place bacon in a large, cold cast iron or other oven safe skillet then turn heat to medium and cook until bacon is crisp.
  3. Remove and chop bacon.
  4. Using same cast iron pan, add salmon to skillet, skin side up then saute for 2 minutes.
  5. Flip then saute for 2 minutes, coat with Jala-Mango BBQ sauce and place in oven for approximately 6 minutes.
  6. Divide lettuce between two plates.
  7. Drizzle each plate with fresh lemon, extra virgin olive oil, sea salt and cracked black pepper.
  8. Top with chopped bacon, tomatoes, avocado, and BBQ salmon.

  • 2 Fillets The Fresh Catch® Salmon
  • 1 cup tomato(es), grape, sliced in half
  • 3 West Creek® Bacon, Pieces
  • 1/2 cup West Creek® BBQ Sauce, Jala-Mango
