Ridgecrest® Loaded Pulled Pork Fries
Directions
- Heat oil in fryer to 350°F. Cook fries for 3-4 minutes until golden brown then drain on towel and hold warm.
- Heat butter flavored oil in sauté pan over medium high heat and cook onions for 2-3 minutes to caramelize then reserve warm.
- Whisk hollandaise and chipotle pepper puree then hold warm.
- Place fries on oven proof plate top with pulled pork and diced cheddar cheese. Melt under salamander or in convection oven set to 400°.
- Drizzle the top of the fries with chipotle hollandaise then sprinkle with jalapenos, caramelized onion, and green onion and serve a memory.

- 4 oz Ridgecrest® pulled pork, warmed
- 1 cup Bacio® White Cheddar Cheese, diced
- 4 oz West Creek® Crinkle Cut French Fries
- Brilliance® soy clear fry oil
- 1/2 ea Peak Fresh Produce® Onion(s), Red, medium dice
- 1 tsp Brilliance Butter Flavored Oil
- 1 cup West Creek® hollandaise sauce, prepared
- 1 1/2 tbsp Contigo Chipotle pepper, pureed
- 1 tbsp Contigo® Sliced Jalapenos
