Directions
- Add all ingredients except oil - mix 1 minute on low speed Add oil - mix 1 minute on low speed. Mix on 2nd speed to desired development - typically to a smooth consistency.
- Let dough reach desired temperature of 75-80 degrees fahrenheit.
- Divide and round. Cover and Retard dough overnight.

- 25 lbs. Luigi® flour
- 14 1/2 lbs. water
- 1/8 lb. yeast, instant, dry
- 1/2 lb. oil
- 1/2 lb. salt
- 1/2 lb. sugar
