Luigi® Pizza Crust

Directions

  1. Add all ingredients except oil - mix 1 minute on low speed Add oil - mix 1 minute on low speed. Mix on 2nd speed to desired development - typically to a smooth consistency.
  2. Let dough reach desired temperature of 75-80 degrees fahrenheit.
  3. Divide and round. Cover and Retard dough overnight.

  • 25 lbs. Luigi® flour
  • 14 1/2 lbs. water
  • 1/8 lb. yeast, instant, dry
  • 1/2 lb. oil
  • 1/2 lb. salt
  • 1/2 lb. sugar
