Magellan® Jerk Wings

Directions

  1.  Place the party wings on a sheet pan lined with parchment paper. Place uncovered in walk in cooler overnight to dry the skin. This will help you get a crispy skin on the grill.
  2. Toss wings in olive oil then sprinkle jerk seasoning, salt, and pepper on wigs and coat.
  3. Place wings on grill over medium high heat and cook for 15-20 minutes until wings reach an internal temperature of 165 degrees F.
  4. Serve with a side of the mango habanero sauce for a pop to the palate.

Ingredients

  • 24 ea West Creek® first and second joint party wings
  • 1 cup Magellan® jerk seasoning
  • 1/4 cup Roma® Oil, Olive
  • 1 tsp Magellan® sea salt
  • 1 tsp Magellan® Black Pepper, ground
  • 2 cups West Creek® mango habanero dipping sauce, (see recipe below)

West Creek® Mango Habanero Dipping Sauce

Directions

  1. Heat olive oil over medium heat add habanero, ginger, salt, and onion to pan and cook for 3-4 minutes. Add vinegar and water then simmer for 3-4 minutes more.
  2. Place this mixture with mango in a food processor then puree and serve for a fire bite.

  • 2 cups West Creek® IQF mango chunks, thawed
  • 6 ea pepper(s), habanero, chopped and seeded
  • 1 ea Peak Fresh Produce® Onion(s), Yellow, medium dice
  • 1 tsp Peak Fresh Produce® ginger, peeled and chopped
  • 1 tbsp Roma® Oil, Olive
  • 1 tsp Magellan® sea salt
  • 1/2 cup water
  • 1/2 cup West Creek® Vinegar, Apple Cider
