Mediterranean Salad with Chicken Skewers

Directions

  1. Brush chicken thigh skewers with butter flavored oil then sprinkle with Greek seasoning. Bake at 400° for 10-20 minutes until internal temperature is 165°.
  2. Remove chicken from oven and hold for plating.
  3. Toss romaine with dressing and place in center of plate or pasta bowl.
  4. Arrange tomatoes, cucumbers, and olives around romaine.
  5. Place chicken skewers on top of greens and top with thin sliced red onion then sprinkle with feta cheese and serve with a side of warm naan.
