Mini Peach Cobblers
Directions
- Preheat oven to 350°F.
- Place peaches in a mixing bowl with the sugar, brown sugar, cornstarch, lemon juice, vanilla and cinnamon. Stir to combine and set aside.
- In another bowl, stir together all the topping ingredients until the dough comes together.
- Place 1 tbsp. of melted butter into each ramekin.
- Divide the peaches then sprinkle the topping on to the peaches.
- Place the ramekins on a baking sheet lined with parchment paper. Bake for approximately 30-35 minutes or until the tops are lightly golden brown and peaches are bubbling.
- Allow to cool for a few minutes. Serve warm with vanilla ice cream or whipped cream. Enjoy!

- 1 can West Creek® Diced Peaches in Juice
- 2/3 cup sugar, granulated
- 2/3 cup sugar, brown
- 1/4 cup cornstarch
- 3 tsp. vanilla extract
- 1 tbsp. lemon juice
- pinch of cinnamon, ground
- 8 tbsp. unsalted butter, melted (for the ramekins)
- 3 cups flour
- 3 tsp. baking powder
- 1 1/2 cup sugar, granulated
- 3 tsp. vanilla extract
- 16 tbsp. unsalted butter, melted
