Mini Peach Cobblers

Directions

  1. Preheat oven to 350°F.
  2. Place peaches in a mixing bowl with the sugar, brown sugar, cornstarch, lemon juice, vanilla and cinnamon. Stir to combine and set aside.
  3. In another bowl, stir together all the topping ingredients until the dough comes together.
  4. Place 1 tbsp. of melted butter into each ramekin.
  5. Divide the peaches then sprinkle the topping on to the peaches.
  6. Place the ramekins on a baking sheet lined with parchment paper. Bake for approximately 30-35 minutes or until the tops are lightly golden brown and peaches are bubbling.
  7. Allow to cool for a few minutes. Serve warm with vanilla ice cream or whipped cream. Enjoy!

  • 2/3 cup sugar, granulated
  • 2/3 cup sugar, brown
  • 1/4 cup cornstarch
  • 3 tsp. vanilla extract
  • 1 tbsp. lemon juice

  • 8 tbsp. unsalted butter, melted (for the ramekins)
