New Mexico Beef Pizza

Directions

  1. Heat olive oil in a saucepan then add onion. Cook onion until translucent, 5-7 minutes.
  2. Add garlic and cumin until fragrant, about 2-3 minutes. Add flour to saucepan and stir to coat flour with oil, about 1-2 minutes. Add chicken broth and undrained can of green chilies. Bring to boil and simmer until thickened, about 10-15 minutes.
  3. To assemble the pizza, add 3.5 oz. of the green chili sauce on top of the pizza crust. Then layer the Monterey Jack cheese, corn, beef topping, and Queso Fresco.
  4. Place in preheated 450° F conventional or pizza oven and bake 12-18 minutes or until crust is golden and cheese is bubbly and beginning to brown.
  5. After baking, drizzle with the Mexican sour cream and top with fresh cilantro. NOTE: Salsa Verde can be used instead of the homemade sauce.
