Orange Roasted Carrots


  1.  Heat oven to 400 degrees F. 
  2. In an oven proof dish toss carrot with ginger, salt, orange zest and olive oil.
  3. Pour in orange juice and roast covered for 10-15 minutes until carrots are tender.
  4. Drizzle honey and green onion on top of carrots then increase oven temperature to 450 degrees F and cook uncovered for 10 minutes then serve.


  • 2 lbs Peak Fresh Produce® Carrot(s), Baby
  • 1/2 tsp Magellan® sea salt
  • 1 tbsp Peak Fresh Produce® ginger, minced
  • 1 tbsp Roma® Oil, Olive
  • 2 tbsp West Creek® Honey
  • 3 Peak Fresh Produce® Orange(s), juice and zest
  • 1 bunch Peak Fresh Produce® Onion(s), Green, chopped
