Oven Roasted Sweet Potatoes with Bacon
Directions
- In a sauté pan over medium heat add olive oil and bacon. Cook bacon half-way about 2-3 minutes. Drain bacon and reserve the bacon fat.
- Toss potatoes and peppers with bacon fat and bacon then transfer to oven proof pan.
- Pre-heat oven to 400 degrees F. Place pan in oven and cook for 15-20 minutes until potatoes and peppers are tender.
- Remove pan from oven season with salt, pepper, and thyme then serve.

- 4 Peak Fresh Produce® Potato(es), Sweet, peeled, diced, and blanched
- 1/2 lb Ridgecrest® Bacon, Applewood Slice(s), raw and chopped
- 2 Peak Fresh Produce® Poblano Peppers, julienne
- 1 tsp Peak Fresh Produce® Thyme, Fresh, copped
- 1/8 tsp Magellan® sea salt
- 1/8 tsp Magellan® Black Pepper, ground
- 1/4 cup Roma® Oil, Olive
