Peak Fresh Produce® Honey Fire Carrots
Directions
- Bring one quart of water to a boil and blanch carrots for 30-45 seconds.
- Combine one quart of water and ice. Drop cooked carrots in ice water to stop cooking process.
- Whisk together honey, Gochujang, and cinnamon.
- Toss carrots in olive oil and salt. Heat oven to 450 degrees. Place carrots on sheet pan and roast for 5-6 minutes.
- Toss carrots with spicy honey and serve.
Ingredients
- 2 lbs Peak Fresh Produce® Carrot(s), peeled and sliced on a bias
- 2 qt water
- 3 cups ice
- 1/2 cup West Creek® Honey
- 1 tsp Gochujang
- 2 tbsp Peak Fresh Produce® Scallion(s), finely chopped
- 1 tsp Roma® Cinnamon, Ground
- 2 tbsp Roma® extra virgin olive oil
- 1/8 tsp Magellan® sea salt
