Pork Fennel and Leek Ragout
Directions
- Cook all ingredients, except pork, in a sauce pan, bring to a boil and then simmer for 15 minutes.
- Add pork into mixture and simmer for another 15 minutes.
- Pour into a bowl, bringing pork to the top, and then garnish with fennel sprigs and shaved Parmesan cheese.

- 1/2 bunch fennel, fresh
- 1 stalk leek(s), chopped
- 1 lemon(s), juiced, squeezed
- 2 Peak Fresh Produce® Celery, Stalk(s), chopped
- 6 oz. potato(es), baby
- 1/4 cup tomato juice
- 1/2 cup water
