Pork Fennel and Leek Ragout

Directions

  1. Cook all ingredients, except pork, in a sauce pan, bring to a boil and then simmer for 15 minutes.
  2. Add pork into mixture and simmer for another 15 minutes.
  3. Pour into a bowl, bringing pork to the top, and then garnish with fennel sprigs and shaved Parmesan cheese.

  • 1/2 bunch fennel, fresh
  • 1 stalk leek(s), chopped
  • 1 lemon(s), juiced, squeezed
  • 2 Peak Fresh Produce® Celery, Stalk(s), chopped
  • 6 oz. potato(es), baby
  • 1/4 cup tomato juice
  • 1/2 cup water
