Pumpkin N’ Brew Soup

Directions

  1. Sweat the onions, celery, red pepper, garlic, ginger, and cumin in butter.
  2. Deglaze with beer and reduce to a syrup.
  3. Add puree and stir until hot.
  4. Add stock and blend in a blender until desired consistency is reached. Return to stove on medium heat.
  5. Mound in cheddar cheese and heavy cream.
  6. Adjust seasoning, garnish, and serve.

Ingredients

  • 2 oz. unsalted butter
  • 1 ea. yellow onion, minced
  • 4 stalks celery, small dice
  • 2 ea. Red pepper, small dice
  • 6 garlic, clove(s), minced
  • 1 tbsp ginger, minced
  • 1/2 tsp cumin, toasted
  • 12 oz. beer, dark
  • 2 cups Libby's Pumpkin Puree
  • 4 cups chicken stock
  • 4 cups cheese, cheddar
  • 1 cup cream, heavy
  • bacon, lardons, large dice, for garnish
  • pumpkin seeds, toasted, for garnish
  • salt and pepper, to taste
