Reuben Baked Potato

This appetizer combines potatoes, creamy cheese and your favorite reuben ingredients for a perfect bar snack.
Reuben Baked Potato
Directions
- Wash potatoes
- Rub with olive oil
- Bake in oven at 350 degrees until softened
- Cut in half and core out each side to make a cup, reserving the cored potato
- In a bowl, mix all other ingredients except cream cheese and Parmesan
- Mix cream cheese with extra cored potato
- Combine potato and cream cheese mixture with other mixed ingredients
- Scoop mixture into each half, heaping it over a little
- Sprinkle Parmesan cheese on top and bake until browned
- Sprinkle with paprika and serve.

- 1 tsp. caraway seeds
- 1/2 cup cheese, Swiss, shredded
- 5 oz. corned beef, fully cooked, chopped

- 4 Peak Fresh Produce® Potato(es)
- 3 Tbsps. Roma® Cheese, Parmesan, grated
- 14 oz. sauerkraut
- 3 oz. West Creek® Cream Cheese
- 1 Tbsp. West Creek® Sauce, Horseradish
