Spicy Pork Carnitas
Directions
- Rub 1 can of chipotle adobe and sauce over meat.
- Sear off pork. Add onions and garlic, oregano-lightly brown.
- Add bay leaf, lime juice, stock and oranges.
- Braise for 4-5hrs at 350 until pulls apart. Do not pull apart at this time.
- Cool, and reheat for 1 hr the next day at 350. Pull apart at this time.

- 1 cup clarified butter
- 2 qts chicken stock
- 15 tbsp adobo sauce, chipotle
- 2 tbsp oregano, dried
- 1-2 tsp garlic, clove(s)
- 3/4 cup lime, juice, fresh
- 3 onion(s), peeled, quatered
- 3-4 orange(s), quatered
- 15.6 pounds Allegiance® Pork, Butt, or pork shoulder cushion meat
- 5 tbsp West Creek® Salt
- 4 tomato(es)
