Squash Casserole with Pecan Topping

Directions

  1. Combine squash, sugar, 2/3 stick of butter, and only 1 tsp. of the vanilla. Beat together well the remaining tsp. of vanilla and eggs. Combine thoroughly with squash mixture.
  2. Place in a greased 1 1/2 quart casserole.
  3. Using a fork, mix together the brown sugar, 1/2 stick of butter, flour and pecans. Sprinkle over casserole.
  4. Bake 45 minutes at 350 degrees.

  • 1/2 cup pecans, chopped
  • 3 cups squash, butternut, or acorn squash
  • 2 tsp. vanilla extract, pure, divided
  • 1/2 cup West Creek® Sugar, Granulated
