Summer Strawberry Salad
Directions
- In a large mixing bowl toss salad mix, strawberries, pineapple, red onion, cucumbers and nuts until mixed thoroughly.
- Add ½ the dressing (recipe below) and toss until mixed thoroughly.
- Plate, sprinkle with almonds and garnish with dressing.
Ingredients
- 1 pt almonds, toasted
- 5 lb lettuce, Arcadian mix
- 10 lb Magellan® Pineapple Tidbits, Canned, can
- 2 lb nuts, candied
- 3 each Peak Fresh Produce® Cucumber(s), peeled & sliced
- 2 each Peak Fresh Produce® Onion(s), Red, diced
- 4 pt strawberries, fresh, sliced
Strawberry Vinaigrette Dressing
Directions
- In hobart mixing bowl, add sugar, salt, white pepper and vinegar. Mix on speed two until well blended. Add pureed strawberries, and continue mixing.
- Slowly add olive oil until emulsified in dressing mix.
- Store in a 2 gallon container. Label, date, and refrigerate.
