Gently form and stretch pizza dough into a 10-inch circle using flour as needed to prevent from sticking.
Place stretched dough onto a pizza screen brushed with 1/2 Tablespoon(s) of olive oil; brush the remaining olive oil evenly across the top of the dough.
Ladle the sauce onto the pizza leaving a 1/2-inch border around the outside.
Top with cheese blend, beef crumbles, and pepperoni.
Cook in the impinger for 5 minutes at 550° F.
Once cooked, remove from the impinger and allow to rest for 1-2 minutes.
Garnish with tajin seasoning and cilantro studded cotija cheese.
