Tilapia Puttanesca

Directions

  1. In a saucepan heat olive oil over medium heat. Add shallots, garlic, and anchovies, stir often, cook for 2-3 minutes or until the anchovies soften.
  2. Sprinkle in red pepper flakes and tomato paste, stirring occasionally cook for about 3 minutes.
  3. Add olives, wine, capers, water, and lemon peel. Cook for 8-10 minutes, or until most of the liquid has cooked down. Stir in cooked pasta.
  4. Season tilapia filets with salt & pepper. In a separate pan, sear on each side for 2-3 minutes until cooked through.
  5. Plate tilapia fillet over pasta and serve

  • 1 lb. pasta, cooked, preferably bucatini or linguine
  • 4 tbsp. oil, olive, divided
  • 1 shallot(s), diced
  • 6 garlic, clove(s), sliced
  • 4 anchovy, filets
  • 1 tsp. red pepper, flakes, crushed
  • 2 tbsp. tomato, paste
  • 1 cup Castelvetrano olives, crushed, pits removed
  • 3/4 cup white wine
  • 1 cup water
  • 2 tbsp. capers, drained
  • 3 lemon peel, strips
  • salt and pepper, to taste
