Blueberry Ketchup
Directions
- Heat oil over medium heat in a medium sauce until shimmering.
- Add shallot and cook until softened, but not browned, about 4 minutes. Add in ginger and garlic and cook until fragrant, about 30 seconds. Add in blueberries, vinegar, brown sugar, and salt and bring to a boil.
- Reduce heat and simmer until thickened, about 30-45 minutes.
- Let cool to room temperature

- 1 tsp ginger, fresh, minced
- 1 Peak Fresh Produce® Garlic, Clove(s), medium
- 1 tsp salt and pepper, to taste
- 2 cups West Creek® Blueberries, Frozen
- 1/4 cup West Creek® Sugar, Brown
- 1/4 cup West Creek® Vinegar, Red Wine
