Breakfast Shrimp & Grits
Directions
- To prepare shrimp, in a small bowl, toss shrimp with seafood seasoning. Preheat small sauté pan over high heat for 1-3 minutes, then add oil to pan. When oil begins to slightly smoke, add shrimp and cook for 2-3 minutes on one side and another 1-2 minutes on the other side, or until shrimp reach minimum internal temperature of 165°F.
- With 2-3 minutes left in shrimp cooking time, preheat separate small nonstick pan over medium-high heat for 1-2 minutes. Add butter and egg, lowering heat to medium-low. Fry egg to desired specifications and season with salt and pepper.
- To serve, place a dollop of grits on service plate. Arrange shrimp over grits. Flank shrimp and grits with fried egg. Smother shrimp and grits with 1 cup Chesapeake Gravy and garnish with chopped parsley.

- 1/2 tsp butter, small dice
- 1 tsp oil, canola
- 1 each egg(s), whole, large
- 1 cup Chesapeake Gravy, (see recipe below)
- 1 1/2 cups cheddar cheese grits
- 1/2 tbsp parsley, Italian, chopped
- to taste Black Pepper
- to taste Kosher salt
- 1/2 tsp seafood seasoning
- 4 oz shrimp, 36/40, peeled, tail-off, deveined
Chesapeake Gravy
Directions
- To prepare Chesapeake Gravy, pre-heat small saucepot over medium-high heat for 1-2 minutes. Add butter, onion, celery, garlic and seafood seasoning, frying over medium heat until vegetables are cooked and translucent, approximately 2-3 minutes. Reduce heat to low.
- Add prepared Custom Culinary® PanRoast® Brown Gravy and bring mixture to a simmer. Hold at 150°F for service.
