Dijon Crusted Rack of Lamb
Directions
- Preheat oven to 375.
- Combine bread crumbs, seasoning, garlic and 1/2 of oil. Combine and set aside.
- Heat
skillet and add remaining oil. Season rack with salt and pepper and brown. Remove and coat with mustard,
then seasoned bread crumbs.
- Wrap bones with foil and place in oven. Cook for about 10-15 minutes, or until
desired doneness.

- 1 oz mustard, dijon, extra strong
- 1 oz garlic, chopped, in oil
- 1 oz Roma® Italian Seasoning, add to bread crumbs
- 14 oz Piancone® Epicureo Lamb, Rack
- 2 oz Luigi® Soy Pomace blend oil
