Empire's Treasure Crabby Brie Melt
Directions
- In a saute pan over medium heat add Piancone olive oil and Empire Treasure crab cake.
- Brown crab cake on each side about 1-2 minutes per side. Remove from pan.
- Place two slices of brie on one slice toasted of brioche bread top with crab cake then top with the other two slices of brie.
- Place in oven or salamander broiler to melt brie. Plate and top with arcadian salad greens and tabasco glaze.

- 2 slices roll(s), brioche
- 1 4 oz Empire Treasure Crab Cake
- 1 oz Peak citrus tabasco glaze
- 1 tbsp Piancone® Oil, Olive
- 1/2 cup Arcadian salad greens
- 2 tbsp Nature's Best Dairy® Butter, Unsalted

- Combine all ingredients in a bowl and blend.
- Form into 8 crab cakes.

- 1/2 cup bread crumbs, Italian
- 1/4 tsp horseradish, prepared
- 1 Peak Fresh Produce® Lemon(s), juice only
- 1 lb Empires Treasure lump crab meat
- 1/4 cup West Creek® Mayonnaise
- 2 tbsp mustard, creole
- 2 tbsp Peak Fresh Produce Parsley, flat leaf, chopped
Citrus Tabasco Glaze
Directions
- Combine all ingredients in a sauce pan over medium heat and allow to simmer until reduced by half.
- Once mixture is thick enough to coat the back of a spoon.
- Remove from heat.

- 1/3 cup water
