Fruit and Vegetable Curried Stew

Directions

  1. In a large pot combine all ingredients over medium high heat to a boil.
  2. Reduce heat and simmer until the potatoes are tender.
  3. Add the cilantro and serve over brown rice, quinoa, or couscous.
  4. Top with the sliced scallions before serving.

Ingredients

  • 6 oz. apricots, dried, chopped
  • 3 Tbsp. curry powder
  • 2 cloves garlic, minced
  • 6 oz. cranberries, dried
  • 1/2 cup Peak Fresh Produce® Cilantro, chopped
  • 1 cup Peak Fresh Produce® Onion(s), Red, medium diced
  • 1 cup Peak Fresh Produce® Pepper(s), Green Bell, medium diced
  • 1 lb. Peak Fresh Produce® Potato(es), Sweet, medium diced
  • 1/2 cup Peak Fresh Produce® Scallion(s), chopped
  • pinch red pepper, flakes
  • 24 oz. water
  • 8 oz. West Creek® Honey
  • 6 oz. West Creek® Peanut Butter
