Place lavash on pizza screen and pre heat convection oven to 450 degrees F.
Spread pizza sauce on lavash then sprinkle on shredded cheese. Now place 4-5 spoons of ricotta cheese on lavash. Arrange sliced pepperoni then bake for 6-7 minutes.
Remove from oven drizzle balsamic glaze on top, slice then serve.

Combine all ingredients.
Allow to sit overnight to blend flavors.
