Huevos Rancheros
Directions
- In a small pan, heat 2 tablespoons of canola oil and add in refried beans and simmer.
- Heat the beef according to package directions.
- While beans are simmering, heat oil in a shallow pan and fry the tortillas.
- Place 2 tortillas on a plate, cover the tortillas with refried beans and top with beef, the fried eggs, ranchero salsa, cilantro, queso fresco, and avocado.
Ingredients
- 1/2 lb. John Soules Foods® Beef Fajita Strips
- 1 cup oil, canola
- 4 Corn Tortillas
- 1 cup Refried beans
- 4 egg(s), fried
- cilantro, fresh, to garnish
- Queso fresco, to garnish
- avocado, to garnish
- 1 cup Ranchero Salsa, (see recipe below)
Ranchero Salsa
Directions
- In a small pan, heat 1 tablespoon of canola oil over medium high heat.
- Sauté garlic, jalapeños, and onion until slightly soft. Fold in tomatoes, water, cumin, and salt and cook until the tomatoes start to break down.
- Remove from heat and set aside.
Ingredients
- 2 tomato(es), Roma, diced
- 1/4 white onion, sliced
- 1 jalapeño(s), sliced
- 1 garlic, clove(s), minced
- 3 tbsp water
- 1 tsp cumin
- 2 tsp salt
