Maple Bacon Jam
Directions
- Place the bacon in the freezer and freeze it 75% of the way. It will be much easier to dice that way. Fine dice the bacon and place it in a larger skillet on medium flame.
- Render the bacon until nearly crispy. Drain half the fat. Add the onion, garlic and thyme. Cook until the onions are translucent.
- Turn down the flame and add the syrup. Cook on low while stirring frequently until you have a thick, gooey mess. Add the cracked pepper to taste. Hold at room temp. for topping on Flat Iron steaks.
- Grill the Double Red Provisions flat iron steak to desire doneness. Approximately 4 minutes per side. When done, allow to sit for 3-4 minutes so the juices set. Slice on a bias against the grain, top with maple bacon jam and serve with your choice of sides.
