Oyster Mushroom Po’ Boy

Directions

  1. Mix the Oyster mushrooms, Veg Liquid Concentrated Base & Cornstarch using a large bowl and place them on to a preheated waffle maker. (This preparation could also be done in a convection oven at 400 F for 8-10 minutes, or until evenly brown & crunchy) Cut into 4 pcs & set aside.
  2. Mix the vegan mayonnaise with mustard and Old Bay seasoning. Divide the sauce in half and fill a clean 2 oz. ramekin & place the other half on to the sandwich itself. Build sandwich with avocado, lettuce, tomato and the oyster mushrooms.

  • 1/2 lb. mushroom(s), oyster, fresh whole, cleaned/separated
  • 1 tbsp. Knorr® Professional Ultimate Vegetable Liquid Concentrated Base
  • cornstarch
  • 1/4 cup Hellmann's® Heavy Duty Vegan Mayonnaise
  • 1 tbsp. Maille Old Style Mustard, whole grain
  • 1/2 tsp. Old Bay® Seasoning
  • 1 piece tomato(es), Roma, sliced
  • 1/2 cup lettuce, romaine heart(s), sliced
  • 1/2 ea. Hass avocado, sliced
  • 1 ea. baguette, 7 in.
