Queso Fundido Tacos
Directions
- For the Queso Fundido: Preheat oven to 350°F. Heat a 12-inch cast iron skillet over medium-high heat.
- Once hot, add the chorizo. Cook, breaking up into small pieces, until browned and cooked through. Drain excess fat.
- Pour in white queso and stir to combine.
- Bake until bubbly, about 15-20 minutes.
- For assembly: Serve queso with tortillas, radishes, onions, cilantro, and lime wedges. Spoon queso into the center of the flour tortilla and top with the desired garnishes.

- 2 lbs. chorizo, raw, casing removed
- 6 cups Chef-mate® Que Bueno White Queso
- 24 ea. Flour tortillas, 6 in., warmed
- 1 bunch radish(es), fresh, sliced
- 1 1/2 cups white onion, small diced
- 1 cup cilantro, fresh, chiffonade
- 24 lime wedges
