Queso Fundido Tacos

Directions

  1. For the Queso Fundido: Preheat oven to 350°F. Heat a 12-inch cast iron skillet over medium-high heat.
  2. Once hot, add the chorizo. Cook, breaking up into small pieces, until browned and cooked through. Drain excess fat.
  3. Pour in white queso and stir to combine.
  4. Bake until bubbly, about 15-20 minutes.
  5. For assembly: Serve queso with tortillas, radishes, onions, cilantro, and lime wedges. Spoon queso into the center of the flour tortilla and top with the desired garnishes.

  • 2 lbs. chorizo, raw, casing removed
  • 6 cups Chef-mate® Que Bueno White Queso
  • 24 ea. Flour tortillas, 6 in., warmed
  • 1 bunch radish(es), fresh, sliced
  • 1 1/2 cups white onion, small diced
  • 1 cup cilantro, fresh, chiffonade
  • 24 lime wedges
