Sweet Potato Hash
Directions
- Bring water to boil then add potatoes and cook until a toothpick or knife inserts easily.
- Remove from water and cool off in colander under cold running water.
- Heat olive oil and bacon in large sauté pan over medium heat. Crisp bacon pieces then remove from pan and reserve.
- Add onion and potato to pan and cook over medium heat for 6-7 minutes.
- Stir in crispy bacon, peppers, green onion, salt, pepper, thyme, and basil and cook for 2-3 minutes then serve.

- 2 Peak Fresh Produce® Potato(es), Sweet, peeled and medium dice
- 2 qts water
- 2 Peak Fresh Produce® Poblano Peppers, roasted, peeled and seeded
- 1 Peak Fresh Produce® Onion(s), Yellow, medium dice
- 4 slices Ridgecrest® Bacon, chopped
- 1/2 tsp Magellan® sea salt
- 1/2 tsp Magellan® Black Pepper, ground
- 1/2 cup Peak Fresh Produce® Onion(s), Green, chopped
- 1 tsp Peak Fresh Produce® Thyme, Fresh, chopped
- 1 tsp Peak Fresh Produce Parsley, chopped
- 1 tbsp Roma® Oil, Olive
