In a bowl, combine avocado, McCormick Culinary Guacamole & More Seasoning Mix, and lime juice. Mix well, mashing avocado to desired consistency. Hold refrigerated for service.
Set salamander to medium-high. For each serving, toast both sides of bread. Cut bread diagonally, plate and spread with 2 tablespoons guacamole on each half of toast.
Cook 2 eggs any style to order. Cover each half slice of bread and guacamole with 1 cooked egg.
Garnish with a cilantro sprig and lime wedge.
