Directions
- Combine the butter, olive oil, garlic and salt in a small shallow skillet and cook over low heat for 2 to 3 minutes, stirring to melt the butter and mellow the garlic.
- Remove from heat and transfer to a bain-marie until needed for service.
- Prepare 10 oz. of the Simplot fries according to the package directions. Remove from the fryer and drain them briefly.
- Transfer the fries to a warm stainless steel bowl, drizzle with a 1 oz. ladle of garlic butter, add 1 tbsp. of parmesan cheese and 2 tsp. of parsley.
- Toss to coat and transfer to a serving boat.

- 4 oz garlic, chopped
- 4 fl oz oil, olive
- 11 oz cheese grated, Parmesan
- 11 tbsp parsley, fresh, finely minced
- 1 tbsp salt
