Ballpark Fries

Directions

  1. Combine the butter, olive oil, garlic and salt in a small shallow skillet and cook over low heat for 2 to 3 minutes, stirring to melt the butter and mellow the garlic.
  2. Remove from heat and transfer to a bain-marie until needed for service.
  3. Prepare 10 oz. of the Simplot fries according to the package directions. Remove from the fryer and drain them briefly.
  4. Transfer the fries to a warm stainless steel bowl, drizzle with a 1 oz. ladle of garlic butter, add 1 tbsp. of parmesan cheese and 2 tsp. of parsley.
  5. Toss to coat and transfer to a serving boat.

  • 4 oz garlic, chopped
  • 4 fl oz oil, olive
  • 11 oz cheese grated, Parmesan
  • 11 tbsp parsley, fresh, finely minced
  • 1 tbsp salt
