Barbacoa Empanadas
Directions
- Preheat oil to 350ºF (about 2 inches in pot).
- Mix barbacoa, onion and cilantro in bowl.
- Fill empanada wrappers with 1/4 cup meat and sprinkle of cheese; seal wrappers by pinching ends together.
- Carefully place shaped empanadas into pot of oil, and fry until golden and crispy. Serve with guacamole, pico de gallo or salsa.

- oil, for frying
- 1 red onion, small diced
- 1/4 cup cilantro, fresh, chopped
- 1/2 cup cheese, Chihuahua
- 1 pack Empanada wrappers
