Braised Lamb Shanks
Directions
- Sprinkle shanks with salt and pepper.
- Heat oil in heavy braising pan over medium-high heat. Sear shanks until brown on all sides, about 5 minutes.
- Add onions, carrots and garlic to pan and saute, about 5 minutes. Deglaze with wine, add tomatoes and stock(or water).
- Add whole sprigs of rosemary and thyme.
- Cover with (oven safe) plastic wrap and foil. Braise in a 325 degree oven 2.5 to 3 hrs.
- Remove shanks and herbs.

- 3 Peak Fresh Produce® Carrot(s), cut 1/2 in rounds
- 10 Peak Fresh Produce® Garlic, Clove(s), crushed
- 2 Peak Fresh Produce® Onion(s), Yellow, chopped
- 2 bu. Peak Fresh Produce® Thyme, Fresh
- 1 qt. Peak Fresh Produce® Tomato(es), whole, peeled
- 2 tbsp. Roma® Oil, Olive
- 3 rosemary, bunch(es), fresh
- salt and pepper, to taste
- 3 cups water
- 1 bottle wine, red, 750 mL
