Measure 1 gallon of hot, not boiling, water into a large bowl. Add the seasoning mixture and hydrate.
Place the potato slices into a full 2½ inch hotel pan. Top with the diced onions, and sausage. Pour therehydrated Au Gratin seasoning mixture over the potatoes and sausage.
Bake uncovered in a 400°F oven for 30 minutes. Top with shredded cheddar cheese and bake for 10more minutes.
Remove from the oven and cut into portions. Hold hot for service.

3 lbs. sausage, breakfast (bulk spicy or traditional)
