Mix all dry ingredients for the catfish breading. In a separate bowl whisk two eggs and season with a dash or two of hot sauce if desired.
Dredge the catfish in the egg mixture, then in the flour mixture. Fry the catfish in 350°F oil for about 3 minutes on each side.
To make the spicy honey butter, stir together melted butter, hot sauce, and honey, and set aside.
To assemble sandwiches, slice biscuits in half spread spicy honey butter on each side, then layer catfish, fried egg, 2 pieces bacon, and cheddar cheese.
