Cajun Fried Catfish Breakfast Biscuit

Directions

  1. Mix all dry ingredients for the catfish breading. In a separate bowl whisk two eggs and season with a dash or two of hot sauce if desired.
  2. Dredge the catfish in the egg mixture, then in the flour mixture. Fry the catfish in 350°F oil for about 3 minutes on each side.
  3. To make the spicy honey butter, stir together melted butter, hot sauce, and honey, and set aside. 
  4. To assemble sandwiches, slice biscuits in half spread spicy honey butter on each side, then layer catfish, fried egg, 2 pieces bacon, and cheddar cheese.

  • 4 3 to 5 oz. World Dock Seafood® Catfish fillets, cut in half
  • 10 egg(s), 8 fried, two set aside for breading
  • 8 biscuits, Southern style, split in half
  • 8 strips bacon, cooked and cut in half
  • 8 slices cheese, cheddar
  • oil, for frying
  • 2 tsp Cajun Seasoning
  • 1 cup cornmeal, medium ground for more texture
  • 1/2 cup flour, all-purpose
  • 1/2 cup cornstarch
  • Kosher salt and freshly ground black pepper
  • 3/4 stick butter, melted
  • 10 to 15 dashes hot sauce
  • 1/3 cup honey
