Calf's Liver with Onions
Directions
- In a sauté pan over medium heat add half of butter. Add onions, salt and pepper. Cook for 4-5 minutes.
- Add white wine and reduce by 3/4 . Hold onions warm.
- In a separate pan add remaining butter over medium heat.
- Dredge calves liver in all purpose flour then place in pan and cook for 2-3 minutes per side.
- Plate and top with onions then serve.

- 1/4 tsp. black pepper, ground
- 3 oz. calves liver, slice(s), (8)
- 3 oz. clarified butter
- 1/2 Cup(s) flour, all-purpose
- 1 Tbsp. parsley, minced
- 2 Peak Fresh Produce® Onion(s), (julienne)
- 1/8 tsp. salt, kosher
- 1 Cup(s) wine, white
