Crispy Allegiance® Pork Belly

Directions

  1. Place the pork belly in a deep fryer for 5-7 minutes until crispy.
  2. Combine the molasses, apple juice and whiskey in a small pan and reduce until thick.
  3. Spoon the finished sauce on a plate and place the pork belly on top. Garnish with the apple rings.

Ingredients

  • 6 oz. Allegiance® Pork, Belly, cooked and seasoned (see recipe below)
  • 2 oz. West Creek® Molasses
  • 2 oz. apple juice
  • 2 oz. bourbon whiskey
  • 3 ea. Magellan® Apple Rings, (see recipe below)

Allegiance® Pork Belly

Directions

  1. Score the fat on top of the belly. Season with salt, pepper and Magellan Cajun Seasoning.
  2. Place in a 450° F oven fat side up for 30 minutes. Turn the oven down to 250° F and roast for three hours. To keep it flat stack some metal sheet pans on top of it while roasting.
  3. Cool and cut to size.

  • salt and pepper
  • 1/3 cup Magellan® Cajun seasoning

Magellan® Apple Rings

Directions

  1. Core the apple and slice into rings.
  2. Combine the lemon juice and water. Dip each slice of apple in liquid to prevent browning.
  3. Combine the sugar and Cajun spice. Pat each apple slice dry and press one side into the spice mixture.
  4. Place in a dehydrator or in a low oven (170° F) with the door slightly open overnight.

  • 1 tbsp lemon juice
  • 1/2 cup water
  • 1/4 cup Magellan® Cajun seasoning
  • 1/4 cup West Creek® sugar
