Dijon Herb Pork Rack
Directions
- Remove Allegiance pork rack from refrigeration and set on counter for 30 minutes.
- While rack is coming to room temperature, make the Dijon coating.
- Mix Dijon, fresh herbs and panko in a bowl.
- Season pork rack with salt and pepper and liberally coat with mustard mixture.
- Place in a casserole and bake at 350 degrees Fahrenheit for 1.25 hours or until internal temperature of 145 degrees has been achieved.
- Rest for at least 20 minutes to let juices settle. Slice and serve.

- 1 cup panko breadcrumbs
- 4 tbsp mustard, dijon
- 1 Pork Rack, 10 bone
- 4 tbsp Peak Fresh Produce® Rosemary, Fresh, chopped
- salt and pepper, to taste
- 4 tbsp Peak Fresh Produce® Thyme, Fresh, chopped
