Empanada De Calabaza

Directions

  1. Assemble the filling by combining pumpkin puree, pulled pork, sage, and thyme.
  2. Create the empanada by putting filling into dough, topping with goat cheese. Fold and use egg whites to seal the edges.
  3. Cool for at least 1 hour.
  4. Fry in 350°F oven until golden brown and hot all the way through.
  5. Serve.

Ingredients

  • 1 1/2 lbs. Empanada dough discs
  • 2 ea. egg, white(s), whisked to create an egg wash
  • 12 oz. Libby's Pumpkin Puree
  • 20 oz. Pumpkin, diced and roasted
  • 1 lb. pork, pulled, smoked
  • 12 oz. cheese crumbles, goat
  • 2 tbsp sage, chopped fine
  • 1 tbsp thyme, fresh, chopped fine
  • salt and pepper, to taste
