Greek Avocado Dressing
Directions
- In a medium bowl, whisk together yogurt and vinegar until combined. Whisk Simplot Harvest Fresh Avocado Pulp into yogurt mixture in batches until combined.
- Stir in sugar, oregano, and thyme. Slowly whisk in olive oil until incorporated.
- Fold in feta, diced Simplot Harvest Fresh Avocado Slices and cucumber (if using). Cover and refrigerate 30 minutes.
- When ready to serve, whisk dressing to loosen; add milk if necessary to thin.

- 3 oz Simplot® Harvest Fresh Avocados™: Avocado Slices
- 1/2 tsp sugar
- 1/4 tsp thyme leaves, dried
- 1 1/2 tbsp vinegar, white
- 12 oz yogurt, Greek, plain fat-free
